From recipes passed down through generations to modern takes on old favourites, these dishes celebrate the flavours that make South African cuisine so memorable.

Creamy Potato Salad

Few dishes are as iconic at a South African braai as a creamy potato salad. Every family has their own version, some add eggs, others swear by pickles or fresh herbs, but the comforting combination of soft potatoes and creamy dressing has made this a favourite. Best of all, it can be prepared ahead of time, allowing the flavours to develop while the braai gets going.

Ingredients

  • 1 kg baby potatoes
  • 4 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 1 tbsp Dijon or wholegrain mustard
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Method

  1. Boil the potatoes until tender and allow them to cool before halving them.
  2. Mix together the mayonnaise, mustard, parsley, salt and pepper.
  3. Fold in the potatoes and chopped eggs until evenly coated.
  4. Refrigerate for at least an hour before serving.

 

Three-Bean Salad

The colourful three-bean salad has earned its place at many South African family gatherings. Its sweet-and-tangy dressing perfectly balances rich braai meats, while its variety of colours make any table look inviting. It's one of those dishes that tastes even better the following day.

Ingredients

  • 1 can green beans, drained
  • 1 can baked beans
  • 1 can kidney beans, drained
  • ½ cup chopped onion

Dressing

  • ½ cup white vinegar
  • ½ cup sugar
  • ¼ cup vegetable oil
  • 1 tsp mustard powder

Method

  1. Whisk together the dressing ingredients until the sugar dissolves.
  2. Combine the beans and onion.
  3. Pour over the dressing and mix well.
  4. Refrigerate for at least four hours or overnight.

 

Classic Braaibroodjies

If there's one side dish that sparks nostalgia, it's the braaibroodjie. Crispy bread, melted cheese, juicy tomato and sweet onion cooked over hot coals create a flavour that's impossible to replicate in an ordinary sandwich toaster. Ingredients

  • 8 slices white bread
  • Butter
  • 8 slices cheddar cheese
  • 2 tomatoes, sliced
  • 1 onion, sliced
  • Salt and pepper
  • Mrs Balls Chutney

Method

  1. Butter the outside of each slice of bread.
  2. Spread some Mrs Balls Chutney on 4 slices of bread
  3. Layer the cheese, tomato and onion on top of the Mrs Balls Chutney.
  4. Season lightly.
  5. Braai over medium coals, turning regularly until the cheese has melted and the bread is golden and toasted.

 

Traditional Mielie Bread

Its soft texture and subtle sweetness pair with everything from boerewors to sticky braai ribs. Served warm with melting butter, it's often one of the first dishes to disappear from the table.

Ingredients

  • 1 can cream-style sweetcorn
  • 1 cup self-raising flour
  • 2 eggs
  • ½ cup milk
  • 2 tbsp melted butter
  • ½ tsp salt

Method

  1. Preheat the oven to 180°C.
  2. Mix all the ingredients until smooth.
  3. Pour into a greased loaf tin.
  4. Bake for 35–40 minutes until golden brown.

Method

Method

  1. Braai the mealies until lightly charred on all sides.

  • 2 cups shredded cabbage
  • 1 grated beetroot
  • 2 grated carrots
  • 1 apple, julienned

Dressing

  • ½ cup plain Greek yoghurt
  • 1 tbsp mayonnaise
  • Juice of 1 lemon
  • 1 tsp honey
  • Salt and pepper

Method

  1. Combine the vegetables and apple.
  2. Mix together the dressing ingredients.
  3. Toss everything together just before serving.
